Lightning Photography Canon Digital Rebel XT?

I'm wondering if a anyone has any good tips for taking lightning photography, or a tutorial maybe, or just the steps/settings to use.
Also, after rereading my manual, I can't find how to lock my focus at Infinity.

Place your camera in Manual Mode. Mount it on a tripod, set the shutter to "B", the f-stop to f5.6, ISO at 100, aim at the storm, manually focus to infinity and try an 8 second exposure.
You can use f8 and ISO 200 for the same 8 second exposure.
